As the name mentionned it, this is an assemblage of  black and white Pinot. A rare blend who brings a balance between freshness and rishness.
The 20% of Pinot Blanc provides lots of minerality and a touch of spice.
After the sparkle calm down, the fruit’s part shows itself in your mouth with a no ending lengh.
2017 harvest who also enjoy 20% of a ‘réserve perpetuelle’ started in 2006 and stored in Foudres.

1 year in barrel on its fine lees in order to be as faithful to the expression of the terroir. Followed by 24 months on lees in the bottle before beeing disgorged with 0 dosage.

How do you feel about the term ‘natural wine’?
”I do in fact work without chemicals in the vines, use native yeast and very little sulfur, and I do so biodynamically since 2002. So I guess that lumps me in, but for me this is just making wine.”
