How do you feel about the term ‘natural wine’?
”I do in fact work without chemicals in the vines, use native yeast and very little sulfur, and I do so biodynamically since 2002. So I guess that lumps me in, but for me this is just making wine.”Olivier Horiot

As the name suggests, this wine is a blend of black and white Pinot grapes, creating a unique and harmonious balance between freshness and richness. The inclusion of 20% Pinot Blanc adds a pronounced mineral character with a hint of spice.
Once the effervescence settles, the fruit flavors come to the forefront, offering a lingering and endless finish. This vintage hails from the 2019 harvest and benefits from a 20% contribution of a ‘réserve perpétuelle’ dating back to 2006, which has been carefully stored in Foudres.
The wine spends one year in barrels on its fine lees to faithfully reflect the terroir’s expression, followed by 35 months on lees in the bottle before disgorgement with a zero dosage.
